Standard Gallery Template Settings

I have a website with different pages for different product categories. Each page has a gallery for each product within that page’s category. Every time I add a new gallery category, I have to go to every page to exclude it so that it will only show up on the one page where it is supposed to be. Is there a way to change the standard gallery template settings so that instead of choosing which gallery categories to exclude, I can choose which ones to include? This would prevent the inconvenience of changing every page every time I add a gallery with a new category. Or is there a different way to organize my galleries/ pictures so that I don’t have this problem?
