Page template for custom posts

Hi there,

I’m interested in making a custom post listing similar to this:
http://www.motherearthnewsfair.com/texas/workshops/

Would it be possible to copy the minimal blog page template and edit code to draw from custom posts? If so, I’d want to make these changes:
– Add filters with sortable categories (similar to link above)
– Change image dimensions and size
– Add custom field under post title

Let me know what you suggest. I’m using the Highend Template, and the site I’m working on is http://www.TheEnergyFair.org.
