Meta?

In my settings, I’m told I can disable individual settings through meta on each page. I see a custom meta option in the essential grid settings on an individual page as well as alt. sources and skin modifications. When I click ‘create new meta keys’ I am presented with the option to ‘add new meta’ and ‘add new meta reference.’ What is the next step? Or do I backtrack somewhere?
