Demo Data Menu vs Production Site

I’ve just bought the theme again for a new site AND I’ve created a subdomain to look at the HighEnd Demo content. Both my production & subdomain installed using the same theme & the install was fine. In the subdomain there are many things I’d like to have work in my production but don’t know how.

1 – the Demo Data Menu (subdomain install) (see attached image) shows useful ease of use configuration settings not found in my production, how can I turn this on in the production system?
2 – the Demo Data top menu, both the Menu Item & Underline are BOTH the same colour, in my production, only the underline is in colour. The colour I use is #00acfc. How can I enable this in my production?
