Catagory

I have created several catagories. Yet, on any page that allows catagories, only one catagory is available. It’s not the first catagory. I can’t see anything that names it as the default catagory. I have a plugin called anonymous post which I use and the one catagory that is available is the one I use successfully in a form in anonymous post. I’ve troubleshot everything I can think of. I’m a newby.
