Add Tags to Portfolio posts?

Is there a way to add Tags to Portfolio posts?

I see and use the Category option, but I don’t see the option to add Tags, which would be very handy.

Also, when I am on a single Portfolio Post, I have enabled the option for the Next/Previous navigation arrows. Currently the order of the Portfolio post seems to be determined by the creation date. Is there a way to change that to be alphabetical based on the Portfolio post title?
