Full Width Posts?

I have some existing content as posts which has worked well for me with other themes because I can assign categories etc. Is there any way to add the title / subtitle feature you have for your pages to the posts? Also, anyway to have the option to have posts full width vs with a sidebar?

I am fairly confident with editing code if it requires a code change.
