Copyright Line and List Modifications

I would like to create a custom Copyright Line. I’d like to know how to add/modify the menu choices. Example I want to have Home, Contact Us, About Us, Terms and Privacy links but I do not want to add these to the navigation menus found at the top of each page.

I would like to know how to modify the categories list names.
