Header Size with Text

Hi,

I would like to ask a question about the Header Format if possible. I am currently set my header layout to the second option and have my logo to the left and some writing to the right. I would like to know if the following is possible:

My website under development is at: http://www.theperformancestudio.com.au.tmp.anchor.net.au/

1) Make the header height smaller – ie less black space from the top of page to top of my logo and also from bottom of my logo to the menu area?
2) Is it possible to have the writing (Western Sydney’s Best Performing Arts School) moved to the centre or closer to the logo rather than left justified?
3) Is it possible to move the menu to the right so that the logo could use more depth in the header area.

Sorry lots of questions I know..but to make these small changes would change my website from great (awesome theme alert!) to amazing!!
