Highend Gallery and Portfolio Quick Category Question

Hi there, I am using the Highend theme and I want to use the gallery or the portfolio layout for a page. I was wondering if it was possible to change the name of the categories or to add more categories. There is an option to exclude categories, but I’d really like to edit it more than that.
