Filtering Blog Display

I would like to keep the demo blog posts as they are great learning tools, but I don’t want them showing up in my blog. I figured I would create my own category for my new posts, and just filter the old ones out on the main blog page, so customers only see my posts. I created a category called Colorefresh. However, I cannot find any filter on the main blog page settings and I am not seeing this in your Forum.

How do I accomplish just showing my new posts without deleting the old ones?
